I’ve enjoyed the spiced livery flavour of faggots ever since I was a kid. They are good cheap winter fodder, ideal for using up bits and pieces (in this case, game). Generally they’re eaten with peas, though at this time of the year I prefer mashed potato, neeps or coarsely mashed parsnips, and/or some creamed Brussels sprouts. To wrap the faggots, you’ll need some lamb or pork caul fat, which a butcher should be able to get for you.
