This garlic sauce is a variation on bread sauce and is a great match for simple roast chicken. Out of the wild garlic season, you can make it just with the baked garlic or if you’ve preserved some pesto-fashion, you can just stir in a couple of spoonfuls or so at the end. I think gravy often drowns the natural flavours of a good chicken, whereas a sauce like this acts more like a dip.
