If I’ve had to peel thick asparagus or only used the tips in a recipe, the trimmings never go in the bin. I’ve been using them to make this soup for years - it tastes slightly different each time, depending on the herbs I use. Feel free to vary the herbs, but I find that stronger ones like thyme, rosemary, coriander and tarragon are best avoided as they dominate and overwhelm the subtle fragrance of the soup.
