This tart makes a good starter, or light lunch with a salad; it’s also ideal for a picnic. Buy good quality butter puff pastry if you can - it gives a much lighter result than standard supermarket ready-made puff.


  • 300-350 g ready-made all-butter puff pastry
  • plain flour for dusting
  • 1 egg, beaten
