Pea and mint is of course a classic combination and may be the obvious choice for a soup, but lovage also complements peas really well. Like mint, it is very fragrant and has a special flavour but it is an underused herb, probably because of its potency. Certainly, lovage must be added with caution or it will overpower other flavours. I always have some in the garden because it’s great walking out the back door and grabbing a few leaves of something that’s so hard to find in the shops.
