Don’t even think of making vanilla ice cream on the cheap... you might as well buy it. You’ll need lots of egg yolks and cream, plus a nice creamy milk such as gold top, Guernsey or Jersey. Fresh, good quality vanilla pods are essential - not ones that have been lying around for years, drying out and losing their fragrance. You can boost their flavour by adding a little good quality vanilla extract, such as Madagascar Bourbon vanilla extract, but not artificial flavouring.
