Braden rost is a traditional way to eat smoked salmon that was most likely invented by mistake. Basically the salmon is cured and smoked traditionally, then finished in a hot kiln. I would imagine that someone had been on the highland brew and accidentally turned up the heat! If you have a home smoker then you could create it yourself using a cure of sea salt and unrefined brown sugar, or simply buy it ready done.
