This is a great way to cook sea trout or salmon for a party. It’s very easy and has quite an unusual but delicious taste. You can use a fillet of any size - just up the cooking time slightly for a larger fish. And if you happen to have an outside brick oven, it will be perfect for cooking this dish. Serve as a starter or main dish, or as part of a selection of dishes for a party.
