Making fried ham and eggs is an extremely good and welcome way of using up a piece of cooked gammon or ham.
Slice the gammon or ham rather thinly. Melt the butter in a large frying pan, put in the ham and break in the eggs. Cover the pan with a lid and let it cook over a medium heat until the eggs are just set.
If you want the ham crisp round the-edges, cook it in the butter first before breaking in the eggs and putting on the lid.
