In the past, and until quite recently, trout were seldom bought, but came straight out of the river. Nowadays trout farms abound and ‘trout with almonds’ has become one of the good old standbys on hotel menus, along with ‘smoked trout with horseradish’. A more traditional and equally good dish is a plate of simply fried or grilled trout with herb-flavoured butter.
