This is a beautiful golden pie with a delicious flavour. Take care when adding salt, as some smoked haddocks are extremely salty.

  • 225 g (½ lb) smoked golden fillet of haddock, cod or whiting

Method

Put the fish in an ovenproof dish with the milk and 2 tablespoons water. Put in the bayleaf to flavour it and bake uncovered at 180°C, 350°F, Gas Mark 4 for 20 minutes. Take out the fish when it is cool enough to handle and skin and flake it into large f
