  • 1.5 kg (3 lb) silverside or topside, rolled and tied into a neat shape
  • 2 onions in their skins

Method

Put the beef in a large pan, cover with boiling water and bring very slowly back to simmering point. Simmer for 15-20 minutes, skimming off the scum as it rises. Now add the onions, with roots and outer skins removed but one layer of skin left on - this gives the broth an appetizing colour - the celery, turnip, leeks, herbs and peppercorns.
