Reform cutlets and Reform sauce were invented by the famous Francatelli, head chef of the Royal kitchens until 1852 and then of the Reform Club. His invention made, the Club famous, and is still a favourite with London clubs.

The Edward VII chops are a quicker, easier and plainer, but equally good version of Reform cutlets, and are served with a simple mayonnaise instead of Reform sauce.
