‘Pease pudding hot, pease pudding cold, pease pudding in the pot nine days old!’

In fact pease pudding is very good cold; when it has been cooked with a shank or knuckle of gammon or ham it sets to a beautiful jelly; 9 days old might not be so good, though it will keep at least 3-4 days in a cool place, and can be reheated by steaming.
