This is a delicious melting cabbage dish which has a particularly English flavour.
Bring a large pan of salted water to the boil. Roughly chop the cabbage, discarding the stalk and coarse bits of rib. Wash and put into the boiling water for 2 minutes to remove strong flavours. Drain and return the cabbage to the pan with the milk and nut of butter. Season lightly, cover the pan and simmer gently for 20 minutes, taking care it does not burn.
