Celery and cheese makes a very proper combination. This particular recipe makes a good first course for a dinner party since it can be prepared well beforehand and can then be put in the oven, 20 minutes before the meal starts, to heat through.
Trim away the celery leaves, including the inner ones, but keep heads whole. Bring a large pan of salted water to the boil and plunge in the celery heads; let them cook for about 15 minutes, until they are tender but not too soft. Drain carefully.
