Shell and wash the beans, if using fresh ones, and blanch them in boiling salted water for 2 minutes. Then drain them. Chop the onion and soften it in the butter. When it is pale golden brown, stir in the flour and let it simmer in the butter for 2 minutes. Stir in the wine or stock and add the beans and ham, and a little salt and pepper.
