Leeks are among the most ancient of our vegetables, but surprisingly were, for centuries, used mainly as flavouring rather than as a vegetable in their own right. In time they reached proper vegetable status, and were often served with a white sauce poured over them. However, even the nicest sauce tends to mask their delicate flavour, so try them with butter only.
