The combination of peas, button onions and lettuce gives one of the most delicious traditional summer flavours. The peas will not be their usual bright green but will have a melting succulence.
Boil the skinned onions in salted water for 10 minutes to blanch them. Shell the peas if fresh. Wash the lettuce leaves but do not dry them, and use them all except two to line the inside of a small saucepan, just large enough to hold the peas. Put in the peas and onions, the butter and sugar and a little pinch of salt. Put the pan over a very low heat and keep an eye on it as the lettuce leave
