An old farmhouse recipe for cooking field mushrooms. Although these open umbrellas are hard to find unless you live in the country and know what to look for and where, free-ranging field mushrooms do sometimes find their way into the shops: alternatively, use the wonderful champignons de Paris, large and pinker than our usual button mushrooms, which are too small for this dish.
