Farmhouse salad

For the salad

• 1 cos lettuce
• 1 iceberg lettuce
• 1 bunch spring onions

Take the lettuces apart, discarding the tougher outside leaves. Wash and shake the lettuce leaves so that they are perfectly dry. A clean tea-towel makes a good salad shaker; swing it outside if possible as there will be a good spray of water. Put the lettuce in a large salad bowl.
