This very good dish of fried breadcrumbs was popular in the eighteenth century with game birds and venison and is still just as good and popular today.

Ingredients

  • 25 g (1 oz) butter
  • 75 g (3

Method

Heat the butter in a frying pan and when it bubbles slowly add the crumbs, a sprinkle at a time, until they have covered the bottom of the pan. Stir them round with a fork until they are all crisp and golden, then tip them quickly on to a double sheet of kitchen paper to drain. Pile them into a bowl and serve swiftly, sprinkled with finely chopped parsley if liked.
