Ingredients

  • 450 g (1 lb) fresh tomatoes
  • 1 carrot
  • 1

Method

Put the fresh tomatoes in a bowl, pour boiling water over and skin them at once.

Chop the carrot, celery and onion very finely and put them in a saucepan with the oil. Let them cook gently, covered, for 15 minutes, giving them an occasional stir to make sure they do not stick or brown.

Chop the tomatoes coarsely and put them into the saucepan with the thyme, sugar, salt and pepp
