This salad sauce, made very easily from hard-boiled egg yolks, is a less rich and less temperamental cousin of mayonnaise. It is delicious with fish, cold meat, salads of all kinds, hard-boiled eggs and potato salad, so much nicer than the bottled salad cream that has generally replaced it today.
