Mayonnaise, said to be the invention of the French doctor of Mary Queen of Scots, must in fact have been introduced to this country by her Court, but is a far older sauce. Moyen or may on was the medieval French for egg yolks, and a mixture of oil, vinegar and egg was already known in those early times, although it may not have been quite the same sauce as the mayonnaise we know today.
