This dish was created for; Arnold Bennett by the chef of the Savoy Grill in 1937. Bennett lunched in the Grill regularly when he was working in Fleet Street as columnist and book reviewer of the Evening Standard, and later wrote about the hotel in his famous novel ‘Imperial Palace’ (Another recipe, this time a soufflé, also uses this favourite combination of ingredients)
