Delicately ‘baked eggs’ used to be a great favourite for tea. They also make a very good first course for dinner.

Ingredients

  • 1 teaspoon flour

Method

Heat the oven to 190°C, 375°F, Gas Mark 5.

Butter four little fireproof ramekins. Mix the beaten eggs with the flour, melted butter, cheese and cream. Now season with salt, cayenne pepper and ginger and mix in the finely chopped chives. Pour the golden, speckled mixture into the buttered pots and bake
