Scotch eggs are an old way of making a simple egg into a filling and delicious dish. In the past the coating was grated ham, chopped anchovies and breadcrumbs, but sausagemeat is easier to handle and tastes excellent if a few extra spices and herbs are added to it.
The eggs should be boiled for 10-12 minutes, not longer. Cool and shell them carefully. Mix the sausagemeat with the herbs
