Few people realize what a venerable dish macaroni cheese is; macaroni with grated cheese and butter, known then as macrows, was eaten at the court of Richard II, and by the early nineteenth century it was served bathed in a cheese sauce, with a lovely tomato sauce handed separately to eat with it. This is an adaptation of Eliza Acton’s recipe.
