Peel the potatoes and slice them thinly. Put them in a saucepan with the milk, season with salt and pepper and simmer gently for 10-15 minutes until almost tender, but still whole and unbroken. Scoop them out of the milk and keep the milk on one side. Peel the onions and chop them fairly finely. Grate the cheese.
