Tripe is considered a vulgar dish, but, if it helps people to overcome their aversion to it, was enjoyed by the Prince of Wales in 1933. It is in fact, for those who have decided to like it, a very good dish indeed and succulent in texture. Choose different parts of the tripe for your dish; a piece of honeycomb and a piece of double tripe, nice and white.
