Flummery, a lovely pale slippery pudding related to syllabub and custard, is a delicious pure white jelly, which used to be made with potato flour, rice flour or sago mixed and cooked long and slowly with the fruit juice, milk or cream. A more delicate version is made with ground almonds. Serve it with a very choice selection of small fruits, such as figs, greengages, raspberries, strawberries and blackberries.
