The real old-fashioned gooseberry fool was not made with-custard but with cream or milk and sugar, and was considered ‘a very suitable preparation for children’ partly because sufficient for five or six children cost 6d to make. Less cheap now, alas, but it is still a favourite pudding.
Top and tail the gooseberries and put them in a small thick saucepan with 2 tablespoons of water and two tablespoons sugar. Cover with a lid and stand it in a roasting tin of water. Place it over a low heat and let it stew very gently for ¾ hour until the gooseberries are soft.
