These gingery cakes used to be sold at fairs and enjoyed by Old Uncle Tom Cobleigh and all, together with great draughts of spiced ale.

Ingredients

  • 100 g (4 oz) plain flour
  • 1 level teaspoon of baking powder

Method

Mix all the dry ingredients together except the sugar. Rub in the fat and then add sugar. Preheat the oven to 190°C, 375°F, Gas Mark 5. Heat the syrup till it runs and add to the mixture. Shape and roll into balls the size of a walnut, place these on a greased tin on the top shelf of t
