When I was a kid, an ice-cream sandwich was one of my favorite treats from the “ice-cream truck.” Growing up in New Jersey, we had the Good Humor Ice Cream man—I was always so disappointed he didn’t tell me a joke first! Now that I’m grown up (?), I love to stock these in my freezer for that brownie and ice cream fix, without the fuss!

Ingredients

Brownie Base

  • 8 oz. unsweetened chocolate, coarsely chopped
  • 1⅓ cups unsalted butter
  • 4

Method

Heat oven to 350 degrees. Lightly grease two 13x9" baking pans.

For the Brownie Base

Melt the chocolate and butter in a large saucepan over low heat, stirring to blend.

Remove saucepan from heat. Whisk in sugar, eggs, and vanilla to blend.

Stir in flour, baking powder, and salt to combine. Spread into prepared pans.
