Some people like to use a shallow pan when poaching eggs, but we prefer to use the deepest pan we can get our hands on. By the time the egg reaches the bottom of the pan, it has already formed the perfect ‘tear drop’ shape. The trick is not to touch the egg for the first minute of cooking as it will still be very fragile.
