From the pomegranate seeds to the smoked aubergine baba ganoush, this has all the hallmarks of the Eastern Med. Topped with perfectly poached eggs, it is a Brother Marcus classic.

Method

Heat the oil in a wide frying pan, then cook the pita on both sides so they’re crispy and hot.

Put each pita on a plate, then dollop a heaped tablespoon of labneh on top and push it to the edges of the bread in a circular motion. Repeat with a heaped tablespoon of baba ganoush.

Top with a couple of perfectly poached eggs, and scatter over a lit
