A malawach is a buttery layered Israeli flatbread a bit like an Indian paratha, and it makes the perfect base for a poached egg topped with fresh asparagus, grated tomato and spicy zhoug. The malawach absorbs all the delicious flavours of the sauces and egg yolk but retains its shape and doesn’t go soggy. A good time-saving tip is to make the malawach in advance and freeze them. Then they can be quickly reheated in a hot pan when you need them.
