Tomato Salad and Tapenade on Toasted Sourdough

This is our take on the popular Cretan dish dakos which typically consists of bread topped with tomatoes and feta. We use toasted sourdough rubbed with fragrant rosemary oil and tapenade which contrasts beautifully with the sweet tomatoes.

Ingredients

For the Tomato Salad:

  • 4 large San Marzano tomatoes
  • 1 shallot, finely sliced
  • 2 tbsp ol

Method

Chop the tomatoes and mix them with the shallot in a bowl, then add the oil, oregano and a pinch of salt.

Brush each piece of bread with rosemary oil on both sides then grill on both sides.

Now spread a tablespoon of tapenade evenly over each piece of grilled bread and top with some tomato salad and a generous drizzle of basil oil. Finally, sprinkle with crumbled feta and garnis
