This Lebanese dessert is found in bakeries across the Middle East. These surprisingly light, delicious little bundles consist of a folded pancake stuffed with cream and lightly soaked in a rose-flavoured syrup. In our version, honeycomb adds texture and rhubarb provides a pleasing tartness that contrasts with the sweet syrup.

For the Honeycomb:

  • 1 tsp bicarbonate of soda

Method

Make the honeycomb first. Before you begin, liberally grease your ovenproof dish and measure out your bicarbonate of soda. Then in a saucepan, mix the caster sugar and golden syrup together and heat very gently over a low heat, stirring with a wooden spoon until all the sugar crystals have melted. Do not let the mixture bubble. Once completely melted, turn up the heat a little and simmer for ab
