For these cookies, the dough is cooled in the fridge for an hour before baking. They take a bit longer to make but the results are deliciously light and slightly chewy.

Ingredients

  • 180 g unsalted butter
  • 210 g light soft brown sugar
  • 2

Method

In a mixer, cream the butter and sugar together until light and fluffy (if you don’t have an electric mixer you can cream by hand, using a fork initially to break up the butter). Add the eggs, one at a time, followed by the vanilla extract, mixing after each addition. Fold the chocolate in along with the flour, bicarbonate of soda and salt.

Place the dough on a tray and chill for 30 min
