Courgette and Walnut Loaf

Both courgettes and walnuts are popular Eastern Mediterranean ingredients used in many types of dishes. Walnuts in particular have a special place in the hearts of the Greeks — they are often eaten with honey at weddings as a symbol of fertility. This courgette cake is light yet intensely flavoured and makes the perfect match to a morning coffee. Note that you do need to chill the mixture for one hour before baking.
