These delicious, nut-filled pastries are made with shredded filo pastry called kateifi, which can be found in Greek shops or online. It might look like a big tangle of strands when you first get it out of the packet but work with it in small sections and you’ll soon get the hang of it.
To make your nut filling, place your walnuts, almonds and ground cinnamon in a food processor and pulse four to five times until you have an evenly chunky, crumby texture.
Melt the butter and mix it with the oil.
