Puff pastry can be a faff to make so if you want to skip to the good bit, just use shop-bought. However, this rough puff recipe is an easy way to make it in a food processor without having to worry too much about laminating butter and dough. You can use shop-bought za’atar but it tastes so much better if you make your own.
The night before, take your halloumi out of the packaging and put it on a plate in the fridge overnight to dry out. This will make it easier to grate.
To make the rough puff pastry, put the flour and salt in a food processor. Take your cold butter and cut it into 2cm cubes. Add half of these to the flour and pulse five times, then add the rest of your butter and pulse another five times
