This is a family favourite in Tasos’s house. It tastes delicious, looks spectacular and is surprisingly easy to make. Don’t be shy about adding lots of dried mint as it only enhances the flavour. You’ll need a bundt tin (round cake tin with a hole in the middle) for this recipe.

Ingredients

  • 250 g halloumi
  • 250 g feta
  • 2–4 tbsp

Method

Grate the halloumi into a bowl and crumble in the feta. Rub the dried mint between your fingers as you add it to the cheese (the finer the mint, the more pronounced the flavour will be), then mix well to combine.

Now take your first sheet of filo, scrunch it slightly in your hand and cover the bottom of the greased bundt tin with it. If necessary, use a second sheet to ensure the bott
