These circular breads are sold in vast quantities by street vendors in Greece where they are known as koulouri and Turkey where they are called simmit. This classic breakfast snack is super easy to make and delicious with butter, preserves, honey, chocolate spread and even Greek yoghurt.

Ingredients

  • 10 g dried yeast
  • 20 g sugar
  • 90 g

Method

Mix the yeast and the sugar in a small bowl and pour in 170ml warm water that is 37°C (or body temperature) and whisk. The best way to test the temperature of the water without a thermometer is to hold your hand under the tap until the water feels very warm but not hot. Very hot water may kill the yeast.
