Once you’ve tasted these soft and chewy flatbreads, you’ll wonder why you ever bought pitas in the supermarket. They’re dead easy to make and handy for brunch, dinner and everything in between. Make a big batch and freeze them.
Combine the sugar and yeast in a small bowl and add 190ml warm water that is 37°C (or body temperature). The best way to test the temperature of the water without a thermometer is to hold your hand under the tap until the water feels very warm but not hot. Very hot water may kill the yeast. Whisk to ensure the sugar has fully dissolved then set the mixture aside for 15 minutes to foam up.
