These pitas are more like the breads found in the Middle East, Israel and even Cyprus rather than traditional Greek ones. The shape varies from region to region, but the basic recipe is the same. These pitas are incredibly versatile and are a favourite for sandwich-making or for dipping into houmous or tzatziki.
Mix the sugar and yeast and add to 300ml water at 37°C (body temperature). The best way to test the temperature of the water without a thermometer is to hold your hand under the tap until the water feels very warm but not hot. Very hot water may kill the yeast. Whisk the mixture to make sure the sugar has dissolved and leave to sit for 15 minutes, by which time it should have formed a foamy lay
