This is our twist on the popular Eastern Mediterranean dip. The trick is to roast the aubergines to charring point, which gives a surprisingly wonderful smoky hit. Combined with spicy paprika, tahini and plenty of citrus, this is simply packed full of flavour!

Ingredients

  • 3 aubergines
  • 3 tbsp olive oil
  • juice of a ½ lemon

Method

For the best smoky flavour char the aubergine over a barbecue, but if you don’t have one, just hold it over your gas hob. It may seem primitive but it works! Pierce the aubergine with a skewer and place it directly on the flame, no pan needed. Burn the hell out of it, rotating it to give a nice even char.
