If you’re using grapes, remove all the stems then rinse the fruit under the cold tap. Strain and pat dry.
If you’re using cherries, rinse them under cold water, then remove the stems and stone them, doing your best to keep the fruit intact.
Take your prepared fruits and place them in a large pot with the clove and 125ml water. Dredge with the sugar and leave to stand overnight:
